Cranberry Pistachio Semifreddo Pudding.…Adulterated from Donna Hay Christmas 2007.
This is a gorgeous little alternative to Christmas pudding. Easy to whip up and leave in the freezer. I served it in cute, little individual espresso cups and grated the white chocolate over the top. And I replaced some of the naughty cream with healthy yogurt and then added icing sugar to sweeten it. Divine.
You need for about 10 (makes 1.5 litres):
3 eggs
2 egg yolks
1 teasp Vanilla essence
Pinch nutmeg
¼ teasp ground cinnamon
1 ¾ cup cream, or use 1 cup cream plus ¾ cup yogurt(*if you use yogurt add about 1 heaped tabs of icing sugar to sweeten)
¾ cup of chopped dried cranberries
¾ cup chopped pistachios
For white drizzle icing:
200g white chocolate
1 tabs vegetable oil
- Throw on Missoni Kaftan.
- Slip into Givenchy gladiators.
- Pop on Ipod and start to sing to Christmas Carols.
- Pour a glass of pink grapefruit. With champagne.
- Chop up the cranberries roughly. Such a pretty colour.
- Chop up the pistachios roughly. Such a pretty colour.
- Separate the 2 yolks from the eggs.
- Now you are going to whisk the eggs over a saucepan of simmering water.
- So find a saucepan and put the water onto simmer.
- Find another saucepan and throw in the 3 eggs and 2 yolks.
- Pour in the vanilla essence and the pinch of nutmeg.
- Don’t let the water boil or you will have scrambled eggs.
- Now place the saucepan with the eggs over the just simmering water and start whisking.
- You need to whisk for about 5 minutes or until it’s thick and pale (as Britney).
- All that whisking has got to be good for the arms.
- After 5 minutes take it off the heat and keep whisking until it’s cool. Watch as it magically goes thicker and paler before your very eyes.
- Now leave that to cool. Have a rest.
- Find another bowl and whisk the cream (and/or yogurt and sugar) until it has cute little soft peaks. Think your thighs after Christmas.
- Fold the egg mix through the cream mix. Fold it gently like a Prada embroidered dress.
- Now fold the cranberries and pistachios through the mix.
- Dip your finger in to taste it and add more sugar if it’s not sweet enough.
- Now pour into individual ramekins or pour it all into a ceramic container to freeze for 4 hours or overnight until set.
- Lick the bowl. There are no calories when you eat standing up.
- If you want to make little puddings as Donna has ( in the photo) then:
- When the mix is forozen use an icecream scoop and scoop the cream into little balls.
- Place them on a baking tray or plate and put back in the freezer until ready to use.
- Then toss the white chocolate and vegetable oil in a saucepan and stir it till it’s melted and smooth as Nicole’s skin.
- Spoon the chocolate over the frozen balls and serve.
- Wow.
