Watermelon Salad with Halloumi Cheese and Mint
Who would have thought? Watermelon and halloumi, but this little salad is an assult on the senses!
Serves 30 models, 6 fatties or 4 gourmands
4-5 cups of ripe cubed watermelon, seeded
4 spring onions
60 grams halloumi cheese
3 full sprigs of mint, leaves roughly chopped
2 tablespoons of balsamic vinegar
3-4 tablespoons of olive oil
salt and a generous amount of pepper
- Dig watermelon out of the fridge.
- Yell at George Clooney to turn off the cricket.
- Ask him to cut up and de-seed watermelon.
- You can chop up the halloumi and even give it a quick fry if you so desire.
- Pour a wine.
- Take off YSL platforms then sit down.
- Pull off leaves from mint.
- Mix olive oil and balsamic.
- Throw it all in the bowl.
- Add lots of pepper.
- Toss the salad, then George Clooney.
- Delicious.




Orange-Mint Salad—
This salad was inspired by one of my kids commenting that “oranges are so every day.” My mom remembers when oranges were a treat. I love oranges, so I wanted to make something a little different. I’m also enjoying using our abundant spearmint while it is still fresh from the garden.
Thinly slice several spearmint leaves, to taste.
Mix in some brown sugar, to taste. I used a bit too much for our tastes, about ½ T.
Peel and chunk oranges. I used two California navels. You can see the effect of the brown sugar in the difference.
This was sweet and tangy and not too juicy. My kids thought it was “ok.”
