Chicken with walnuts and apricots …..adulterated from Vogue Entertaining

We love a dinner where you can just throw it all in and walk away. This is a slightly spicy Moroccan dish that is sensational with couscous or rice

You need: (for 4 hungry dags, 3 skinny men or 25 fashionistas)
2 tablespoons olive oil
20g butter 2 onions, thinly sliced
4 to 6 chicken pieces
3cm piece ginger, finely chopped
1 cinnamon quill, broken in half 175g soft
semi-dried apricots (Soft, semi-dried apricots do not need to be soaked before using. This is good. )
300ml chicken or vegetable stock
1 tablespoon honey cup walnut halves
Bunch of coriander Rice or couscous to serve

  • Find a saucepan with a lid that will hold 4 to 6 chicken breasts. Throw off new $5000 Balenciaga heels that look like trainers. Put on old trainers.

  • Heat half the oil and the naughty butter in a large saucepan over medium heat.

  • Add remaining oil and naughty butter, and cook chicken pieces on both sides until brown as an Hermes caramel

  • This may be a good time to put on the rice or couscous. Put on as in cook not wear. Now add the cooked onions, ginger, cinnamon, apricots, stock and honey, and bring to the boil. They love it
  • Reduce the heat to low - medium, and cook for about 35 - 40 minutes with the lid on. Think facemask that is holding in moisture. You want the chicken so that it is just tender because you will cook it for another 10 minutes with walnuts.

  • Now throw in the walnuts and simmer it without aid for about 10 minutes.
  • Check that the chicken is tender and just about falling off the bone. No more wine or you will be falling off the bone too

  • And serve the chicken relaxing happily with its feet up on a soft and bed of rice or couscous. Divine.
