Hot and Sour Soup ………….adapted and adulterated from Nigella Lawson
Need a quick hit of heat but without the calories? This is so easy it will take you longer to read the recipe than cook it. Perfect for those nights when you need a cleansing and refreshingly tangy dinner ( or when you are scrabbling down in the fridge trying to find something to cook something for dinner )
You can serve it noodles or rice.
This is enough for about 4 fashion editors, 2 men or the all of the cast of Australia’s Next Top Model
You need:
1kg Uncooked Prawn (Shelled And Deveined With Tails Intact)
3 Stalks Lemongrass
2 Litres Chicken Stock
5 Kaffir Limesleaves
150g Small Mushrooms (Caps Only or try Straw Abalone Mushrooms)
A handful of Enoki mushrooms
2 tablespoons Fish Sauce
6 small Fresh Red Chillis
4 Spring Onions
5 tablespoons Lime Juice
2 tablespoons Sour Shrimp Paste ( tom Yum paste)
1 piece Galangal ginger.
1 bunch Coriander
• Crush lemongrass and slice into 5cm pieces.( think ex boyfriend)
• Slice up the ginger into thin sticks ( think models)
• Slice up Kaffir Lime leaves and spring onions into thick 2cm pieces ( think thighs)
• Pour wine ( Don’t think)
• Slice chillies into halves and seed them if you can be bothered.( think it can be too hot)
• Wash or cap the mushrooms ( think dirty bugs)
• Juice the limes. ( think no calories)
• Bring chicken stock to the boil in a large pot and add the Sour shrimp paste, lemongrass, lime leaves, mushroom, fish sauce and chillies.
• Boil for 2 minutes then add ginger, prawns and spring onions. ( think it smells good) • Cook only until prawns turn pink and look edible ( think this is only time I ever mention the colour pink)
• Accessorise with the sexy green coriander leaves.( think Prada s/s 06)
• Then ladle into serving bowls and garnish with snazzy enoki mushrooms. ( think the colours are gorgeous)
• Serve with steamed rice or noodles ( think it’s delicious)
