Bellini
It’s party time! Which can mean only one thing; drinking delicious Bellini. Originally from Harry’s Bar in Venice and made with Prosecco, an Italian sparkling wine, you will find a Bellini slips down just as well with champagne.

You need for two alcoholics or 8 polite guests:
 2 medium peaches (300g), chopped coarsely.
 ½ cup (125ml) peach schnapps.
 750ml chilled champagne.
8 sugar cubes ( a must for the fizz !)

· Chop the peach roughly.
· Find some sugar cubes.
· Taste the champagne to make sure it’s chilled (any excuse).
· Throw the peaches and schnapps in the whizzer until smooth and blended. (Which is just how you will feel after gulping down two of these).
· Combine peach mixture with champagne in chic large Georg Jensen jug.
· Place one sugar cube in each of eight champagne glasses;
· Top with Bellini mixture.
