Healthy, easy and delicious this is perfect for a week night or sensational for a summer dinner party. Less cooking more to time to think about what shoes to wear.
You need for 4 people and 10 models
Bunch Coriander leaves
1 teasp salt
1 coriander root
4 garlics
4 fresh green chillies
3 tabs fresh lime juice
1 tabs of caster sugar
2 tabs fish sauce
I whole snapper from the fish shop gutted please
·Cut up the chillies roughly.
·Squeeze the lime juice
·Smash the garlics
·Whiz the garlic, coriander root and salt
·Pour a wine or two
·Add remaining ingredients to the whizzer.
·Find a chic white baking dish on which to lay out the whole fish
·Have another drink as your eyes meet the eyes of the fish. Bless
·Score the fish …10/10? No. Score it by slashing it with the knife a few times across it to let all the marinade and juices sink in.
·Spoon over the whizzed up sauce but leave a little for later accessorizing
·Bake or steam the fish until cooked maye about 10mins. Won’t take long
·It’s a good time to put on the rice now and set the table.
·Reapply lip gloss.
·When you see the fish is cooked and it smells divine you may serve it by drizzling with the remaining delicious Asian sauce and accessorized with a sprinkling of coriander leaves and thin strips of chillie.
The gorgeous red, the bright green and the stark white all look so chic together.
