Bill’s Tomato Chutney ….From Good Living.
A delicious hot and spicy sauce that is so easy to cook and goes with everything. Dress it up or down, take it from day to night , it’s a must have in your fridge and will work with anything from roast lamb to pasta to scallops. A winner on a cold night when you open the fridge and wonder what to cook.
3 tbsp vegetable oil
2 tsp black mustard seeds
2 tsp turmeric
2 tsp ground cumin
2 long red chillies, finely chopped
2 tbsp freshly grated ginger
2 garlic cloves, crushed
2 x 400g tins chopped tomatoes
100ml malt vinegar or balsamic will do
1/3 cup brown sugar
1 tsp sea salt
·Crush the garlics
·Chop the chillies
·Grate the ginger.
·Watch the manicure.
·Pour a wine or two
·Re-apply lipstick. If you look good you will cook better.
·Heat the naughty oil in a large saucepan over a medium high heat.
·Add the mustard seeds, the turmeric and the cumin and cook giving it a good stir for 3-4 minutes or until its mells gorgeously fragrant.
·Add the chilli, ginger and garlic and cook for a further 2-3 minutes.
·Here’s the tricky bit: Open up the can of tomatoes.
·Toss in the tomatoes,
·Then add the vinegar, sugar and salt
·Pour another wine, grab the latest Vogue, tunr up the heater, grab your Hermes throw
·Let it simmer for about an hour or until it’s thick.
