Mixed Berry Semifreddo …..adulterated from Donna Hay
An easy, fattening, outrageously delicious dessert that you can whip up the day before the dinner party to wow them.
Serves 25 models, 8 x size 12’s or 6 big hungry men.

You need
3 eggs
2 extra egg yolks
½ teasp vanilla extract
1 cup caster sugar
500g frozen red berries
1 ¾ single cream

·Throw the eggs, egg yolks, vanilla and sugar into a heat proof bowl.
·Place the bowl over a saucepan of simmering water and then whisk the egg mix until heated through ( about 5 mins). Don’t let it get hot or you will have scrambled eggs. Ewww.
·Remove from the heat then beat the egg mix with electric beaters till thick and pale (like your legs will be after eating this).
·Break up about 2/3 of the frozen berries and fold it (like a Gucci shirt) into the egg mixture.
·Set it aside for a quiet zen moment.
·Beat the cream in another bowl till it’s really thick and some peaks form (like your hips after eating this).
·Gently fold the egg mixture into the cream …ooh gentle please. So it’s just combined. You want the swirl effect like a Missoni skirt rather than a tie-dyed look.
·Line the base of a loaf tin with some baking paper for easy removal before eating.
·Arrange the remaining berries along the bottom of the tray so they look gorgeous.
·Then pour over the semi freddo mix on top of them
·Cover with foil and throw into the freezer for at least 4 to 5 hours until firm (like your stomach before you indulged in this).
·Serve it berry side up on a big white platter
Cut it up into lovely, big, thick slices on the table in front of your adoring guests for a crowd pleasing moment.
