Scallops with Ginger and Lemongrass

You need for 2:
6 scallops in the shell
2 tabs finely chopped lemongrass
2 tabs grated fresh ginger
½ small red chilli finely chopped
1 tab sesame oil
1 tab fish sauce
1 tab Mirin or dry sherry
Juice of a lime or 2
Coriander leaves for accessorizing
·Now chop up chilli, lemongrass, ginger very finely
·Make sure the scallops are clean, give them a rinse but leave them on the shell.
·Toss the chilli, lemongrass, ginger in with the lime juice, sesame oil, fish sauce and mirin.
·Pour a glass of champers or two.
·Sprinkle a little of the marinade over the scallops and then
·Pop the scallops in a steamer and cook for about 4 or 5 minutes
·Take them out and then
·Drizzle the rest of the marinade over the scallops and toss on some coriander for a bit of accessorizing.
·Sensational!
