Rustic Soda Bread
I can hear it already “As if I am going to make bread.” This bread takes less time than nicking to the shops to buy a loaf. Here’s the secret .You don’t need to wait for it to rise and then bash it up and let it rise again. None of that. All you do is mix flour and some buttermilk and throw it in the oven.
Your friends will love you for it, children will follow you round, dogs will bark and men will fall at your feet.You will make bread and life will never be the same again….
You need:
2 cups of wholemeal self raising flour (or whatever flour is in the cupboard)
2 cups of wholemeal plain flour
1 teasp of bicarb
2 cups of butter milk
- Preheat oven to 220 ish
- Now toss into a bowl the flour (sifted if you’ve got time) and the Bicarb
- Make a little well in the middle and make a wish (to eat this soon?)
- Pour in the buttermilk and mix it up with a spoon so it’s all one big mushy lump
- Go on; put your hand in it and squelch it up
- Give it a kneed for about a minute
- But no need to kneed a lot. Bad luck if you are feeling needy.
- pat into a round ( with flat bottom).
- sprinkle it with lots and lots of seasalt and even some pepper
- Cut the top into a cross
- Whack into the oven for about 45 mins or an hour
- Smells great, looks cracked and crunchy
- It’s cooked when you tap it and it sounds empty and hollow ( think Paris Hilton)
- Eat with lashings of butter
- Serve with Osso Bucco
- it’s delicious kept for days in the fridge and toasted
- Friends, dogs, children, men suddenly appear…!
