Fish with chickpeas and Za’atar (from Gourmet Traveller)
This is a fabulous recipe; healthy, slimming and oh- so- easy to make after a hard day at the shops. You might want to serve it with some beans or salad. And what is Za’atar you ask? It’s a Moroccan spice mix that can easily be found at Herbies spices
You need:
A fillet per person of Blue eye or any other fish
400gm of canned chickpeas
1 tsp harissa (buy a tube and keep in the fridge)
1 tsp Za’atar
3 garlic
2 tabs olive oil
1 tabs preserved lemon
1 red capsicum
½ bunch of roughly chopped parley
·Heat olive oil
·Cut up fish into bite size pieces
·Roast capsicum and then peel off the skin and slice it up into chic little pieces
·Cut up parsley, and preserved lemon, and garlic into chic little pieces
·It’s time to pour a wine non?
·Heat olive oil and cook up garlic then add the fish, chatting and stirring.
·Throw in preserved lemon, za’atar, harissa, chickpeas and capsicum
·Remove from pan, toss in the parsley ever so nonchalantly
·Hey presto! It’s ready.
·Serve with beans and more hariisa on the side and some crusty bread
·Za’atar rocks! ( it’s the new groovy spice)
