Sesame chutney
I always love little dinky things that add a bit of ‘je ne sais quoi’ to calorie conscious gilled fish, lamb or chicken. So easy, you can whip this up while you are multi tasking: drinking, talking, reading all while you are still in your bikini from an after work swim. It’s just divine drizzled over anything. For 4 you need :
¼ cup of sesame seeds toasted (no, don’t put them in the toaster, pop them in the oven for about 5 mins to get a suntan)
A bunch of coriander leaves
A Bunch of mint leaves
A teasp or two of green finely sliced chilies, more if you like it hot
3 tabs of tamarind concentrate ( find it in Asian stores, go for the liquid concentrate not the sticky icky pulp)
1 tabs shaved palm sugar (or brown sugar or any sugar)

A handful of rocket to serve it on.

·Ok, it’s going to get very tricky, so concentrate:
·Whiz it all in a food processor( except the rocket) till it is mushed into a kind of paste.
·Add a bit of water to thin it out a bit, maybe a tablespoon or 2
·Serve drizzled with seared fish, lamb or chicken lounging on a sexy bed of rocket maybe with some rice.
·Eat
·Drink
·Eat more
·Drink less
