Lamb chops with Ratatouille
When in doubt : head to Jamie Oliver. He will always have something you want to eat right now.
Ratatouille is easy to make and perfect to serve with lamb or anything else. Best of all you can keep this in the fridge for eating days later. If you can get lemon thyme it adds a lovely tang. Jamie has added caperberries ( which I didn’t have) : they are just more grown up capers and add another unexpected taste.
Serves 2 : that’s you and George Clooney:
2 tbsp olive oil
2 celery sticks, chopped
2 garlic cloves, diced
2 onions, diced
2 courgettes, diced
1 aubergine, diced
1 red capsicum, diced
4 tomatoes, diced
2 tbsp ( lemon ) thyme
1 tbsp caperberries
1 handful black olives
2 lamb chops, preferably spring lamb
- Climb out of your new Celine wedges.
- Pull on your new Prada jumpsuit.
- Pour a bottle of wine and drink.
- Grab the celery, the onions, garlic, aubergine and courgettes and give to George to chop up.
- You can chop up the tomatoes and the capsicum. I like them in chunky pieces. Think the size of the clasp on a Miu Miu bag.
- Now heat some oil in a large frying pan and sauté the celery, garlic and onions for bout 5-10 minutes.
- Pour another wine. No calories in wine when you are cooking. Scientific tests have proved it.
- Once it is soft as lovely as an Hermes bag you can add the courgettes , aubergine and red capsicum and cook for about 10 minutes.
- Throw in the tomatoes, half the thyme, and a wineglass of water.
- Oh! Look your glass is empty now so you must fill it .
- Now reduce the heat and cook it all until it’s as tender and soft as a new Celine leather Tee.
- Allow to cool to luke warm before adding 1 tabs of caperberries and a handful black olives and a big fat slug of designer olive oil.
- Give it a good mix : taste it and season as generously as you want.
- To cook the lamb heat up a griddle.
- Then while it’s heating up you can rub the chops in lots of sea salt, black pepper, thyme and olive oil.
- Cook for 4-5 minutes or however you want to serve it. George loves it medium rare.
- Allow to rest - it’s been very busy- and then serve lying nonchalantly on the bed of ratatouille.
- Accessorise with cute little chic twigs of lemon Thyme.
- Divine!
