French onion soup …..adulterated from Donnahay.com

For some reason I like soups you can chew. Otherwise what’s the point of eating? I love this divine soup: it almost melts in your mouth while you munch on the soggy cheese toast. It’s a perfect little entrée or something to whip up on a Sunday afternoon. It’s very rich so you could almost serve it as a main course with a chic salade verte. ( and lots of crunchy bread and melted cheese…)

You need for about 4 to 6 fashionista, 2 big blokes or 32 models:

8 brown onions, sliced
30g butter
1 tablespoon olive oil
1 tablespoon thyme leaves
2 tablespoons plain (all-purpose) flour
2 tablespoons brandy
2 tablespoons Dijon mustard
2 litres beef stock
2 cups (500ml) water
Toasted cheese sandwiches or parmesan toasts, to serve

  • Slip into your Gucci trackie pants.
  • Pull on your favorite Hermes cashmere Hoodie.
  • Pour a big fat wine. Gulp.
  • Find the whizzer.
  • Put on Prada sunglasses.
  • Apply more waterproof mascara.
  • Chop up the onions into rough chunks and then toss in the whizzer. This is Nigella’s trick so you don’t spend hours crying over onions. Sob.
  • Now find a large frypan and toss in the onions, butter, oil and thyme over a over medium heat. Wipe away a few tears.
  • Cover with a lid ( that’s the saucepan not you) and let it simmer and cook for about 35 minutes.
  • You can stir every now and then.
  • Donna says the secret to making this soup is to “brown the onions very well, until they are a deep golden colour, a lovely soft texture, and really sweet and flavoursome.”
  • So when the onions are it’s as soft and golden as Beyonce’s booty you can throw in the flour and give it a good stir so it’s all mixed it, say for about 3 minutes.
  • Now open the brandy and pour in 2 tabs. That’s pour in with the onions not in your mouth.
  • Keep stirring and cooking for about 1 minute.
  • Please put away the brandy. Now.
  • Pour another wine instead.
  • Now plop in the mustard, the stock and water and let it simmer for about 15 minutes.
  • It should smell AMAZING!
  • While it’s simmering you should melt some cheese on toast.
  • Serve the divine soup in chic bowls with a slice of toasted cheese on the side or floating virtually on the top.
  • Accessorise with some chic green thyme leaves.
  • Delicious !
