Chicken mushroom Pie .….Adulterated from Jamie’s 30-Minute Meals :

It’s true: it takes no time to whip this up although by the time you open the wine, slip into a Chanel tracksuit and kiss George Clooney it might take longer than 30 minutes .
The idea is you cook up the chicken and mushrooms and then cover with a sheet of puff pastry, throw in the oven and Voila!
TIP: Jamie uses the same baking dish to cook on the stove as to bake in the oven

You need for 4 fashionista or 55 models.

500g free-range chicken breast or thigh
A big knob of unsalted butter
1 bunch of spring onions: say about 6
150g button mushrooms
1 heaped teas plain flour
Heaped teasp of Dijon or English mustard
1 heaped tabs creme fraiche
300ml chicken stock
A few sprigs of thyme
1/2 a nutmeg, grated
1 sheet of pre-rolled puff pastry
1 egg
Sel and poivre.
Extra virgin olive oil.

  • Climb out of Givenchy heels.
  • Pull on Chanel track pants.
  • Pour a huge bottle of wine. Drink.
  • Relax it’s Friday.
  • Pre-heat the oven to 200°C.
  • Chop up the button mushrooms into thin slices: think Jimmy Choo Stiletto
  • Chop up the spring onions into the size of the Vicky B’s diamond ring.
  • Slice the chicken into thin strips or bite-sized chunks the size of the Prada buckle.
  • Heat a good lug of olive oil with and a knob of butter in a heavy-based pan with medium heat.
  • Throw in the chicken and cook for a few minutes.
  • Toss in the mushrooms with the chicken as well as the spring onions.
  • Throw in the lemon thyme leaves.
  • Give a good mix and let it cook away while you kiss George.
  • Sprinkle over a tablespoon of plain flour and give it a good stir and mix well.
  • Pour another glass of wine and guzzle.
  • Dollop in a generous tablespoon of Creme fraiche and two teaspoons of Dijon mustard.
  • Pour in the 300ml of good chicken stock and give a good mix.
  • Go on: have another glass of wine.
  • Grate over nutmeg and stir.
  • Season with lots of sea salt and pepper.
  • Now turn down the heat and leave it quietly simmering ( like George ) while you whip up the pastry lid.
  • Pull out a sheet of Puff pastry and measure it up so that it’s bigger than the baking dish. Duh.
  • When you think chicken mix has thickened slightly (like your thighs over winter) you can cover it with the sheet of pastry.
  • Don’t let the edges fall over the side but instead you can tuck them in to the dish like they are high waist jeans.
  • If you want to be snazzy you can lightly criss-cross the surface of the pastry to make a pattern with a knife but don’t cut: Think Cable knit sweater.
  • To get the pastry nice and brown you can brush the top of the pastry with a lightly beaten egg.
  • Throw in the oven and bake on the top shelf of the oven for around 15 minutes, or until as golden brown as a Chloe bag.
  • Serve with a green salad and crunchy bread. And more crisp white wine.
