Chilli sausage Rolls …. adulterated from Jamieoliver.com
I found this in the latest Jamie magazine ( issue 12) and how could I resist a gourmet chilli sausage roll? Perfect for Christmas drinks…All you do is buy the sausage meat, the puff pastry , add chilli and spinkle with cumin and Voila!
You need to feed about 10 foodies, 20 fashionista or 30 models:
3-4 big long red chillies (depending on how much heat you want - Jamie said he added 6 but they are chilli fiends!)
500g pork sausage meat
½ teasp smoked paprika
500g puff pastry
2 egg yolks, beaten with a splash of milk
1 tbsp whole cumin seeds
- Preheat the oven to 180C.
- Then pour a glass of French Champagne. And inhale.
- Relax. It’s Friday.
- Slip out of tight Alaia shift dress.
- Slip into chic Missoni Caftan. Breathe out.
- Now get to those chillies.
- It’s a nice idea to grill them over a gas flame
- When they until black and blistered. ( as you are after shoe shopping) you can toss in a bowl, cover with glad wrap or foil so they sweat and then are easier to peel.
- When the chillis are cool enough to handle, pull off the skins and scoop out the seeds - or leave in if you want fireworks! But you have that with George Clooney. Tip: when the chilli is hot you tend to drink more. This could be a bad thing.
- Now ask George to chop those little hot devils.
- Find a big bowl and toss in the chillies with the sausage, ½ teasp paprika and a pinch of pepper.
- Sprinkle a work surface ( no, not your desk) with flour.
- Lie out the pastry and cut in half and roll out into 2 strips, 50cm x 15cm each to be precise. About the size of a Celine glove.
- You can now shape the sausage meat into 2 sausage shapes . Don’t think of George as you do this.
- Place the sausage along the middle of each strip.
- Beat the egg yolks with a splash of milk.
- And coat the pastry either side of the sausage with the egg mixture to seal it.
- Fold the pastry over and press down to close it up.
- You can also brush the tops of the sausage rolls with egg wash.
- Accessorise with a sprinkle with cumin seeds and sea salt.
- Cut into chic 5cm lengths and place on a non-stick baking sheet.
- Bake for 20 minutes, or until risen as George Clooney, puffed as P Diddy and golden brown as Beyonce.
