Chilli and Tomato Fish….adulterated from Donnahay.com.au

You need to eat more fish. You have been shopping all day. You are trying not to eat too many calories. You want something quick and healthy. This gets all the ticks. Yes, please!

You need for 4 fashionista, 2 men, 10 metrosexuals and 20 models:

1 tablespoon olive oil
1 onion, sliced
¼ teaspoon chilli flakes
4 x 180g firm white fish fillets
sea salt and cracked black pepper
3 ripe tomatoes, cut into thin wedges
2 teaspoons finely grated lemon rind
2 tablespoons chopped flat-leaf parsley leaves but I prefer coriander

  • Pour another glass of wine.
  • Think about dinner.
  • Go to Donna Hay
  • Check you have fish and the ingredients lying in wait in the fridge.
  • Tell George Clooney he has to eat more fish.
  • Pour another wine.
  • Grate the lemon rind.
  • Cut the tomatoes into chunks.
  • Chop up the coriander if you feel like it.
  • Throw on the new Giles sunglasses and try to chop the onions without sobbing.
  • Wipe away eyeliner before George sees you.
  • Put on the couscous or open can of chickpeas while you start cooking up the fish.
  • Heat a frying pan over medium-high heat.
  • Add the non designer olive oil, onion and chilli and cook for 3 minutes.
  • Sprinkle the fish with salt and pepper.
  • Throw in the pan and fry/cook for 4-5 minutes each side or until just cooked through.
  • Set aside for some alone time ( and keep it warm with a bit of foil).
  • Then turn up the heat baby! George will love it.
  • Toss in the tomatoes and lemon rind with the oil and onion and chilli
  • Cook for about 3 minutes or until just soft.
  • Stir through the coriander .
  • Arrange the fish with dollops of the tomato mix chicly draped across it like a Prada fur stole.
  • Serve with couscous or chickpeas and accessorise with lots more of chic leaves of coriander.
