Lamb and Rosemary Pies…adulterated from Cuisine.com.au

These are cute little individual pies you can make in muffin tins. How chic. How delicious. How easy.

You need for 4 girls, 10 models, 30 fashion editors:

2 tabs olive oil
400g diced lamb
4 baby onions (100g), quartered
1 tabs plain flour
¼ cup (60ml) dry red wine
¾ cup (180ml) beef stock
1 tabs tomato paste
1 tabs fresh rosemary leaves
2 sheets puff pastry
1 egg, beaten lightly
4 fresh rosemary sprigs
20g butter
2½ cups (300g) frozen peas
1 tabsp lemon juice
½ cup (125ml) water

  • Slip into fur lined tracksuit and pull on Chanel ugg boots.
  • Take off Prada glove to pour a wine.
  • Ask George Clooney to get the fire going.
  • Chop up the lamb into bite size pieces.
  • Pull of the rosemary from the thick stem.
  • Pull on Dior sunglasses and waterproof mascara: you know what that means..
  • It’s time to chop the onion into pieces as small as your willpower in Prada
  • Lightly beat the egg for brushing pastry later.
  • Lightly beat George Clooney if doesn’t pour you another wine.
  • Heat half the oil in large saucepan and toss in the lamb.
  • You should cook the lamb, in batches, uncovered, until browned as your new Burberry leather aviator jacket
  • Remove lamb to a spot for some alone time.
  • Now heat the remaining oil in same pan and toss in the onion, stirring, until soft as your Hermes bag.
  • Add flour and stir and cook until the mixture bubbles and thickens. Think your thighs after dessert.
  • Gradually add wine ( to the saucepan AND your glass) plus stock, the tomato paste and the lovely rosemary leaves.
  • Stir until the mix starts to boils and thickens as thick as your Celine wedges.
  • Now toss in the lamb and give it a good stir.
  • Let cool for about 10 minutes.
  • Preheat oven to 200C/180C fan-forced.
  • Moisterise the four holes of six-hole (¾-cup/180ml) muffin pan.
  • Now cut four x 13-centimetre rounds from the pastry sheet as the case for the pies
  • And cut four x nine-centimetre rounds from pastry sheet as the lid
  • Place larger rounds in prepared holes to cover bases and sides; trim excess pastry.
  • Prick bases with fork.
  • Prick George Clooney with a fork if he doesn’t pour you another wine.
  • Now Spoon lamb mixture into the chic little pastry cases;
  • Brush around edges with a little egg mix.
  • Top pies with smaller rounds; gently press around edges to seal. Like a jewelry box.
  • Brush pies with remaining egg;
  • Press one rosemary sprig on the top of each pie to accessorise.
  • Bake pies about 15 minutes or until browned as lightly as your Alexander Wang bag.
  • Stand five minutes in pan before serving.
  • If you want to eat peas with it then heat butter in medium saucepan; cook peas, juice and the water, uncovered, stirring occasionally, about five minutes.
  • Delicious.
