Luscious, juicy figs are in season so buy a box and whip up this amazing pizza.
You don’t need to make the pizza dough just buy pita bread…
You need for one hungry fashionista.
For the topping:
1/2 cup caramelised onions
100g fresh mozzarella, sliced
4 ripe figs, unpeeled and thickly sliced crosswise
1 tsp freshly chopped rosemary
sea salt
freshly ground pepper
150g taleggio (or other washed-rind cheese)
- Gulp down a wine: You made it to Friday
- Slip into your fav Caftan
- Preheat oven to 220C.
- Pop on Chanel sunglasses
- Chop up the onions
- You can cry : You are wearing waterproof mascara.
- Now cook the onions until caramelised as a Celine jacket.
- Let them cool
- Gulp down another wine.
- Lightly moisterise a 26cm pizza tray.
- Plop on a pita bread or pizza base
- Chop up the figs into chic chunky pieces
- Smear over caramelised onion and cover with mozzarella and figs.
- Sprinkle with chic bits of rosemary and sea salt
- Grind over pepper and dot with divine fatty cheese.
- Drizzle with 1 tablespoon extra virgin olive oil
- Bake for 15 minutes until edges are very crisp as a white shirt and the cheese is as bubbling as a glass of Moet
- Slip onto a board and cut into quarters.
- Eat up and be happy !
