Slut Red Raspberries in Chardonnay Jelly ….adulterated from Forever Summer at Nigella.com

There is something very romantic about guzzling this on Valentine’s Day.

Nigella’s writes: “You might think that no recipe could live up to this title. It’s a reasonable presumption, but thank God, a wrong one. This is heaven on the plate: the wine-soused raspberries take on a stained glass, lucent red, their very raspberriness enhanced; the soft, translucently pale coral just-set jelly in which they sit has a heady, floral fragrance that could make a grateful eater weep.

You need for you and George Clooney:
1 bottles of White wine, such as Chardonnay choose a good fruity variety
300g Raspberries
1 vanilla pods, split lengthways
5 sheets leaf gelatine
250g caster sugar
1 carton double cream, to serve

  • Slip into Gucci Bikini.
  • Climb into Alexander McQueen platforms; Bless.
  • Pour a Champagne
  • Open the wine
  • Taste it to make sure it’s right for the recipe.
  • Pour it over the berries in a bowl.
  • Let it marinate and to steep for half an hour while you apply face mask.
  • After half an hour you can strain the wine into a saucepan and put the raspberries to one side for a little alone time.
  • Now grab the saucepan with the wine and toss in a vanilla pod and heat it up
  • Wait till it’s nearly boiling ( as you are over the stove on a hot day) and then turn it off and leave to cool and marinate for about 15 minutes.
  • Time to soak the gelatine leaves in cold water for about 5 minutes in a jug. Make sure it’s all dissolved and mixed up.
  • Guzzle down another champers.
  • Now go back to wine (not in the fridge) and remove the vanilla pod.
  • Then reheat the wine and toss in and stir the sugar until it dissolves. Turn off the heat
  • Tip: Nigella says “allow to boil if you want to lose the alcohol.” As if.
  • You can now add a third of the hot wine to the wrung-out gelatine leaves in a measuring jug and stir to dissolve.
  • This is just to make sure they dissolve properly.
  • Then pour this mixture back into the rest of the wine and stir well.
  • Ok, You can taste it. Divine even if it is warm.
  • Strain this into a large jug.
  • If you want to serve the jelly in chic little bowls then toss the raspberries into about six ( or one big), clear chic glass bowls
  • Pour the strained wine over the top. Doesn’t that look fabulous? Drunk Raspberries. Hic.
  • Pop into the fridge to set for at least 3 hours
  • Tip: You can make a day ahead and it will be delicious.
  • Before serving take out of the fridge about 15 minute before eating so it’s not too cold and give you a headache.
  • Take off face mask before George Clooney gets home.
  • Reapply lip gloss.
  • Serve drizzled with naughty but divine thick double cream.
  • A beautiful, soft and luxurious red jewel dessert.
