Australia Day calls for a classic Aussie dessert. This is a Pavlova when you don’t want to make a pavlova. Just buy the meringues and crumble them with cream then drizzle with strawberries marinated with pomegranate juice. Fabulous!
Nigella says “This recipe uses bottled fresh pomegranate juice to encourage the strawberries to ooze out their fragrant summery juices. You can use freshly squeezed pomegranate juice, in which case, sprinkle some seeds on top of this voluptuous mound of meringue and berry spiked cream”.
You need for 4 greedy gourmandes or 30 models:
4 cups fresh strawberries
2 teaspoons caster or vanilla sugar
2 teaspoons fresh or bottled pomegranate juice
2 cups whipping cream
1 packet individual meringue nests
- Slip into Zimmerman Maxi dress for Australia Day.
- Throw on your thongs.
- Get George Clooney to light the Barbeque
- Pour a Champers. Or two.
- Find a chic bowl.
- Hull and then chop the strawberries into the size of a Jimmy Choo buckle.
- Toss the strawberries in the bowl and sprinkle with sugar and the pomegranate juice.
- Give it a mix so the strawberries are completely covered and then leave the flavours to macerate and dissolve together while you whip the cream.
- In a large bowl you should whip the naughty cream until it’s thick but still soft. A bit like Kylie Minogue.
- Now get the meringues and crumble them into the cream: You want large chunks as big as Elle Macpherson’s brain. But a few sprinkles of fine Meringue dust is also good too. Think Nicole Kidman’s makeup.
- Now get about half a cupful of the chopped strawberries, and fold the meringue cream and rest of the fruit mixture together. Don’t worry there are no calories on public holidays. K.Rudd said so.
- Plop the delicious red and creamy goo into about four chic George Jensen plates (or glasses or in a mound) and accessorise each with some of the remaining macerated strawberries.
