Pear & Blueberry Slice: … adulterated from Bill Granger’s Peach & Raspberry Slice
This should be a slice but I made it as a cake. You can slice it up if you so desire. I didn’t have any peaches or raspberries so I used pears and blueberries. Delicious.
You will need to make a cake to feed 100 models (cut into slices):
185g (1½ cups) plain flour
1½ tsp baking powder, plus ½ tsp extra
125g butter, chilled and diced
115g (½ cup) soft brown sugar
115g (½ cup) caster (superfine) sugar
3 ripe pears or peaches, peeled and sliced into wedges
90g (¾ cup) raspberries or blueberries fresh or frozen
2 tsp natural vanilla extract
1 egg, beaten lightly
185ml (¾ cup) milk
- Preheat oven to 180°C.
- Slip into new Chloe caftan.
- Pour a wine.
- Promise to AFD tomorrow (alcohol free day).
- Promise to go on diet tomorrow.
- Moisterise and grease and also line a 20×30cm baking tray.
- You should moisterise the baking paper too so it doesn’t stick.
- Cut up the pears. You can peel if you can be bothered.
- Sift flour and baking powder into a large bowl.
- Rub in the butter with your fingertips. Feels good. Ignore the manicure.
- Stir in both the sugars. Give it a mix.
- Press half the mixture over the base of the tin.
- Try not to eat the rest. You want to mix that in a minute with the milk, etc.
- Now lie the pears/peaches over the top and then sprinkle with blueberries/raspberries.
- In another bowl toss in the vanilla extract, baking powder, egg and milk and whisk for a minute.
- Add that to the rest of the base mixture and stir well.
- Don’t worry too much about lumps. It’s a bit like getting dressed. There is nothing you can do. It’s what’s on the inside that counts.
- Pour this evenly over the top of the pears/peaches and blueberries/raspberries
- Throw in the oven. Gently. (Can you throw gently?)
- Bake for about an 1 hour but keep an eye on it.
- Cool in the tray.
- Then cut into squares to serve if you want.
- Divine!

Love the concept of more stores with top choices, though I must admit, being short on funds and in my humble opinion, that the items presented in economy class are “punching above their weight”. $180 shoes are not economy, nor $299 jacket!
