Flourless Orange and Poppy Seed Cake… adulterated from the ABC

It’s moist, flourless, tangy and delicious: The perfect cake to make for your darling mother on Mother’s Day!

Just remember you have to boil the oranges for an hour before you start cooking and they should be cool before you start mixing them in.

You need for one hungry Mother, 2 starving parents, a family on a diet, or 30 contestants on ‘Look ten years younger in Ten days.’
2 oranges
6 eggs
250g caster sugar
250g almonds
3 teasp baking powder
2 teasp poppy seeds
Icing sugar for acessorising after baking

  • Climb out of Dior heels.
  • Slip into your favourite drop crutch slouchy oh-so-comfortable harem track pants.
  • Zip up cashmere hoodie and roll up the sleeves.
  • Put on Model Co face lift mask.
  • Now wash the oranges and cut the tops off and score a cross across the top.
  • Toss them whole and unpeeled, in a pot of boiling water for an hour.
  • Now is a good time to whiz up the almonds. (Much nicer than almond meal).
    Tip: Take out a third of the almonds when they are chunky and then whiz the remainder so the almonds are ground to flour. Mix the chunky bits through the fine almonds.
  • Read the latest Vanity Fair. (Tip: Don’t look at the shots of Giselle or you will never eat cake again.)
  • When the oranges are cooked get them out and let them cool and have a chat amongst themselves.
  • Time to preheat oven to 160°C.
  • Moisterise a 20 cm spring form baking pan and line with grease proof paper. You need to do this or it will be a sticky mess.
  • When the oranges are cool-ish throw them in the whizzer and puree the entire orange (including peel) until smooth. If only getting rid of orange peel cellulite was so easy.
  • Find a bowl and now whisk the eggs and sugar until it’s as light and creamy as Dita Von Teese.
  • Toss in the almonds and the baking powder.
  • Slowly stir in the orange puree and then the poppy seeds.
  • Then pour the batter into the pan.
  • You can sprinkle caster sugar on top if you so desire.
  • Toss in the oven and bake for about 50 to 60 mins or more.
  • It should be as golden brown as Beyonce (and as moist and bouncy).
  • Sprinkle with icing sugar when it’s still hot so it melts (and then again later so it looks pretty.)
  • Delicious!
