Lemon Grass Relish

You’ve begged and begged for this little recipe …

Called a relish it’s more like a stir fry paste you can keep in the fridge and use as often as you pull out the Manolos…every day (even if it’s just to look at them!!)Throw it on lamb fillet, dab a bit on a sandwich or stir fry it with chicken and bok choy or hell just go crazy and even better marinate some prawns with it and barbeque them… sumpteuse! And guess what? The best bit it’s sooo easy….

5 cloves of garlic ( no kissing after his one)
½ Spanish onion
1 large red chilli or 4 or 5 of the little buggers
¼ cup peeled and chopped ginger
2 or 3 stalks of lemon grass (peel the outside stuff away and the yukky end and then slice like a spring onion)
50ml Balsamic vinegar
30 ml fish sauce
25 ml light soy
½ cup limejuice
1 cup of brown sugar

Whack the garlic ginger, lemon grass, onion, chilli in the food processor and using your finger press the button to whiz it (see easy!)
Mix the vinegar, fish sauce, soy sauce, limejuice in a bowl
Put the sugar in a big saucepan and let it dissolve a bit on low heat then throw in the lemon grass paste and the vinegar sauces mixture and put on some fabulous music because the you need to stir it for a while on low heat till it caramelizes mmm a bit like jam it needs to be stirred till it gets thick and the lemon grass is cooked ish …maybe it’s like 10 mins
Voila!
Let it cool a little but don’t leave in the saucepan or you’re stuffed as it will stick on the sides
Pour in to a jar and let it really cool before you pop on the lid

You can also serve it on roast pumpkin and rocket and coriander!!
