Prawns with Coriander Pesto.
This is a perfect little something to go with all those bottles of Bolly at your New Years Eve drinks party …. Hic.
It’s a cinch. Doing your makeup is harder than this (it’s just all about the whizzing)
You need:
1 bunch coriander
1 or 2 garlics
2 little red chillies
2 limes juiced
½ cup blanched almonds
125ml peanut oil
500 g prawns
A few extra limes wedges for accessorizing
Apply lip gloss and make sure you look fabulous..
·Throw the garlic, chillies, lime juice and coriander in a whizzer and give it a blast.
·Add the almonds and whiz it again.
·Pour some champers, turn on the new Mariah Carey CD.
·Add the peanut oil but keep the motor running - is that a song?- so it all combines as a paste; make sure it’s not too runny ( like applying fake tan).
·Toss in lots of salt and pepper.
·Hey presto the pesto is done.
·The great thing about pesto is that it keeps in the fridge for about a week so throw it in next to your eye mask, Chanel 19 and La Mer to chill out.
·When you are ready to eat grab the prawns
·And grill them then serve with the pesto and lime wedges
·Make sure you hand out little napkins (nothing worse than pesto on the Choos).
So delicious your guests will never go home…
